On a cold winter night if there
is a wedding to attend, what would you expect? Delicious food served cold or
hot simmered food kept in a nice copper chafing dish? Evidently, you’d choose
the latter anyway. From buffets on Sunday brunches to weddings to any other
catering event, chafing dishes are used to keep the food hot. A French
chauffeur or chafing dish is used for keeping food items that are best served
when hot. They were originally burnt on charcoal, away from direct flames, to
even keep the food like fish from overcooking.
